A veg south Indian dinner for friends:





ingredients for red pepper chutney meeting the blender – roasted red peppers, red onion, tomato, green chili, & urad dal (small black lentil popped for flavor!)




thayir chatham – Tamil for “yogurt rice” - soft boiled long grain, buttermilk/yogurt, grated ginger/carrots/cilantro, roasted mustard seeds




rasam – Sanskrit origin word means “juice” - simple soulful soup with yellow split pea & tomato base, ground spice mix of cumin-coriander-red peppercorns-curry leaves, & cilantro

Gayathri/NYC









the paper dosa had an estimated diameter of 3 feet unrolled & is accompanied by potato masala, mint coconut chutney, & a vaguely spicy sambar. hunt for dosa was inspired by my dear friend of 11 years michael who had come to visit, & triumph occurred at one of my south indian strongholds, madras mahal at 28th & lexington (one of the first indian restaurants in the united states of america). more modestly-sized dosas were a staple of my saturday mornings as a south indian young person so it's hardwired for me as a soul food that is crisp with rice & protein. despite it's telescopic nature there is nothing to see within or beyond the eyehole of the dosa :(.
